You should be doing 10-25% water changes per week depending on the tank and the fish in it. There are fish, such as _Julidochromis_ spp. That do not like water changes, so they would get about a 5% change weekly at a minimum, and more often if I had the time while I was keeping them. When you do water changes, you not only remove nitrates, the end product of the nitrogen cycle in an aquarium, but you remove Dissolved Organic Carbons (DOC) and pheromones, and hormones, as well as other compound that are not measured for, along with the water, which is generally good for the fish.
